We all know decorating cookies always takes longer than we think it will - especially when there are lots of shapes to make!

My range of moulds are based on popular themes and are designed to make creating them easier through using less moulds.

Signature Balloon Garland Moulds:

  • These moulds are designed to be re-shaped - they come out of the mould a little 'stretched' so you can squish the balls together to create plump balloons, and re-shape the garland to suit the shape of your cookie.
  • As the mould is designed to be manipulated, the balloons are unlikely to end up perfectly round once you've finished re-shaping the garland. If you want round balloons, try placing the mould (with fondant already in the mould) in the freezer for 5-10 minutes. De-mould and shape your garland while the fondant is firm, but allow to thaw before placing the garland on your cookie.
  • It is very important to properly prepare the mould by dusting with cornflour before pressing the fondant into the mould. Use a small brush to ensure all internal mould surfaces are covered with cornflour, paying extra careful attention to the small balls and all the edges. If in doubt, more cornflour is better than less - you can always brush the excess cornflour off your garland after it's out of the mould. That said, too much cornflour will make it hard to get the fondant to stay in the mould - it's a balance, just keep trying (it will take a few goes but you'll get the hang of it).
  • After pressing the fondant into the mould, use a sharp knife to remove any excess so you can clearly (and cleanly) see the outline of the mould. You might find that you have removed too much fondant, especially around the small balls, so add small bits of fondant in to fill any gaps. It's important that the mould is 'full' so that you get nice plump balloons in your garland.
